You can give nicknames to your Pokémon in épé and shield, but if you decide not to love one, then you are lucky: the nicknames are not permanent, and they can be changed. The only time you can not change pseudo, it's if you get the Pokémon through an exchange. If you negotiate a Pokémon and want to give it another nickname, ask the person with whom you negotiate to do so before commerce is done.
How to change the nickname of a Pokémon in sword and shield
To change the nickname of a Pokémon, go to any Pokemon center. By entering, you will notice a countertop on the left side of the room. Go to the counter and press A. The man behind the countertop will give you some options. You can evaluate a nickname, you remember a move and forget it.
Select Evaluate a nickname, and choose the Pokémon whose nickname you want to edit. The man will give his verdict on the nickname, usually telling you that it's a nice nickname, but he will also say that you can give him something better. Hit yes, then enter the new nickname you want to use for this Pokémon.
You can do it as many times as you want, for as much Pokémon as you like, for free. Remember that nicknames can not be changed after exchanges. Therefore, if you negotiate Pokémon, make sure everyone is satisfied with the nickname before finishing the exchange.
